When I got it home, I was able to appreciate just how sharp it is. Of course, the true test is how it performs and I have to say, this knife exceeds all expectations. I was able to get almost paper thin slices from a lovely ripe tomato. The little depressions running along either side of the blade are to keep foods from sticking to the blade and they deliver as promised. Everything I sliced just fell away from the blade neatly and cleanly.
I also used this knife to slice up 15 lbs. of potatoes for mashing and I was thrilled with how easily and quickly I accomplished this. It sliced through the largest potatoes like butter with almost no force required. When I was done, I had no hand fatigue at all!
I've been using it daily for a month now and it remains razor sharp. I do use a steel every time I use it, as recommended by my "good cook" friends. I've also purchased 4 more of these Katana series knives and I definitely recommend them to anyone looking to purchase a quality knife.
