This pan replaced an old porcelain-over-cast iron pan that was a favorite for reductions, a bowl of oatmeal, melting butter, etc. The triple layer construction, with the heat-spreading aluminum core going up inside the sides of the pan gives very even heating and nice heat retention. The handle stays cool, as advertised. I'd prefer a pot without rivets inside, but they're tight and easy to clean around. It's hefty and well balanced.
