Review of Martha Stewart Collection EcoCook Fry Pan, 8"

My main concerns about nonstick cookware are durability, esp. of its nonstick qualities, and also environmental impact. Never a fan of Teflon, I grudgingly felt until now there was no "green" alternative. And I just read thatDuPont will phase out Teflon for cookware in the next few years (hmm, wonder why). I stumbled upon this EcoCook line in the back corner at Macy's while trying out stainless steel and cast iron, hoping to replace my old Teflon Circulon* pans (*btw, I don't recommend Circulon, as its ridges trap food residue, requiring over-scrubbing of same, thereby wearing off more Teflon particles!). I bought the smallest size EcoCook pan to test-drive it, without knowing anything other than it was pitched as "green". No seasoning required. I peeled off the stickers on the top and bottom, mildly washed it, heated it on gas stove at medium heat for a minute before adding a tiny bit of oil, and fried an egg. It was so slippery that when i tilted it to move it out of the pan onto the plate, it slid off before i could touch it with the spatula, and overshot the plate. Pan looked perfectly "clean" (guess the little oil went out with the egg) so, without washing it in between, I fearlessly decided to try--without adding any oil this time--some frozen hash browns (something I'd never have dared with my old worn-out teflon pans). The starchy, unoiled potato bits took a little time to fry up sans oil, but they did brown after several minutes, and again, slip-slippery-slid right out of the pan leaving no residue.I'm waiting to see if the longterm durability stays this good--hopefully it wil, as I really support phasing out of Teflon with safer alternatives.
