Review of J.A. Henckels Twin Four Star 8-Inch High Carbon Stainless-Steel Chef's Knife

The balance on this knife is great. I use it for nearly every job. I had a cuisenart food processor and gave it away. I found I was faster with this knife, and there was less cleanup.

Previously I had a 10" chef'sknife and its too long, the motion of picking up the heel of the blademeant I had to lift my arm too high. It just wasn't comfortable. The6" seems too short, the 8" is just right.

You really only needabout 3 knife styles, and this is one of them. (Bread knife, and paringknife are the other two.)
