To soon to evaluate the sharpness of the knives in the set.But what I would like to mention is how disappointed I was after receiving the set, that it looked incomplete, in that, there is an empty slot but no tool to go inside of it. I thought I was missing a piece. I contacted Analon who said that's the way it comes. I asked if I could purchase an additional piece to fill the slot. They only sell sets and not individual pieces.I spent a great deal of money for this set and I am not satisfied with what I received.It was a wedding gift and I feel quite embarrassed about the incomplete look of the set.
