My family enjoys a large breakfast on Sunday mornings.That means a lot of pancakes!My old double griddle warped on my new GE Profile Cooktop and I went in search of a griddle that would work on a smooth surface.As soonas it arrived from Amazon.com, I started cooking!The surface was evenlyheated and the pancakes were as light and fluffy as ever.What a greatproduct!

Review of Nopro Enamel Cast Iron Panini Press

I found this exact panini press at Marshalls for $10...what a steal!

When I got home, I could not wait to use it with my Le Creuset skillet. When I bought the skillet, I did not spend the extra money for the panini press. I had seen this panini press on Amazon and toyed with the idea of buying it there and saving some money instead of spending $70 on the Le Creuset equivalent.

The panini press is a heavy cast iron and is excellent for making paninis! My tuna melt came out beautifully and clean up was a breeze. I highly recommend it, especially if you have the Le Creuset square skillet--it fits perfectly!

I needed a replacement Dutch Oven as my Revere Ware was unsteady on my new smooth-top stove."Good Housekeeping" magazine recently rated cookware and gave Le Creuset top scores.I decided to try one pan, and I have to tell you, this pan is worth every dollar.It cooks more evenly than any of the Calphalon pans I currently own, it pours liquids nicely, and I plan to buy the Le Creuset 8-piece cookware set in the near future.GREAT PRODUCT!

Review of T-Fal Elegance Stainless Steel 3-Quart Covered Saucepan

Basics:
This pot is made of 18/10 stainless steel.There is an aluminum disk in the bottom to promote even heating.I have used it on a Sunpentown induction plate, and it works fine.I have also used it on a gas stove.It has an inner depth of 4" and inner diameter of just over 7.5".

What I like:
1. The stainless steel looks nice and makes me think that I am reducing my family's consumption of PFOA.I don't cook with cheese or other sticky substances, and the stainless steel will survive any type of cooking utensil.(I usually use bamboo chopsticks.)

2. Three quarts/liters is really a convenient size for small-family cooking.

3. The aluminum mass in the base seems to maintain heat better than my T-Fal anodized aluminum or brass cookware.By this I mean, when I cook dry pasta, this pot seems to return to a boil just a bit faster than the thick-walled aluminum pots.

4. It's easy to see through the glass lid.There is no moving open/close valve that I need to clean.

What I don't like:
1. Since the lid is flat, instead of domed, you need to hold it at an angle for a few seconds so that the condensation can drip back into the pot instead of onto the stove or elsewhere in the kitchen.

2. The pot lid handle can get hot.After bringing 2.5 quarts of cold water to a rolling boil, the handle (and lid) is so hot that it's uncomfortable for me to hold it for more than a couple of seconds (waiting for the condensation to drip off).(Update (September 2008): This depends on the type of stove you use and was based on the stove in one apartment.My induction cooker and the stove where I live now are both faster.)

3. After boiling water for an additional ten minutes (the time to cook dry pasta), the air-cooled pot handle becomes so warm that I cannot grip it with my bare hands.So, I'd prefer a phenolic handle.I don't use stovetop cookware in my oven, because the handles are too long to fit.

Summary:
I have used this pot three to five times each week for about four weeks.It's pretty much my favorite saucepan now.(I didn't have the money for All-Clad.)Other pots I have owned include: T-Fal 2.5-qt nonstick brass saucepan, T-Fal 4-qt nonstick anodized aluminum saucepan, T-Fal nonstick anodized aluminum skillet, Martha Stewart nonstick anodized aluminum wok, Anolon nonstick anodized aluminum chef's pan.

Review of All-Clad Stainless French Skillet

All-Clad Stainless French SkilletMy All Clad LTD 13" French skillet pan will now get more use now that I converted from an electric range to a (natural) gas range.I tried using the 13" French skillet on my 8" electric element and was disappointed with the uneven heating: the outer portion of the bottom did not get hot enough to cook the food (in my case, omelets).That was not a problem with my All Clad 12" fry pans (Copper Core and LTD).Now that I have a natural gas range, the French skillet's entire bottom heats evenly and my omelets turn out great.The handle length works for this largest of All Clad's French skillets.I decided to buy this pan over the All Clad 14" fry pan while both pan bottoms are the same diameter, the French skillet's pan top has a smaller diameter than the 14" fry pan due to the steeper slope.If I need to cover the French skillet when cooking, I can use the lid from my All Clad 6 quart sauté pan (which fits)!There is no All Clad lid I know that I can cover the 14" fry pan, not even if you buy it separately.And the 13" French skillet feels lighter than the 14" fry pan (LTD or stainless).If All Clad made the French skillet in Copper Core, I may get it depending on the weight.Copper is heavy.

PROS:
Weights less than the All Clad 14" stainless or LTD fry pan but with the same bottom cooking area.
Can be covered if you have the lid for the stainless or LTD 6 quart sauté pans

CONS:Does not heat evenly when used on an electric (coil) range.

One last note.If you have a gas range (mine is a Wolf) I really noticed just how quickly the Copper Core pans heats up when compared with the stainless and LTD lines.When I was using an electric range, I appreciated how quickly the Copper Cores heat up.My suggestion is to hold each pan and determine whether you can comfortably handle the weight of each pan and whether the pan's handles are comfortable to you.I like the longer length handles on the All Clad Copper Core pans.All Clad uses a different length and style handle for their LTD and stainless series than the Copper Core series.That standard length handle does not work for the larger sauté (6 Qt), sauce (4 quart), and fry (14") pans: it's just too short.It's all right for their other pans.

Review of Lodge Logic Pre-Seasoned 12-Quart Camp Dutch Oven with Iron Lid

As has been the case, for me, with all things lodge, the quality of this cast iron cookware is amazing.I didn't really need a dutch oven as large as this one, but when I saw this, I just couldn't resist.So far, I've only used it once (maybe because I just got it???) to make a shortrib recipe and it came out absolutely wonderful.I doubled up on all of the ingredients because I had to justify buying such a large dutch oven.Everything cooked evenly and to perfection.

I've been using cast-iron rather heavily for about four years now and will never look back.Speaking of using it heavily, I must caution you - this thing is "heavy"!!!That is not a negative.It's just to mention that quality is not "free".In any event, you can always use it for doing "curls" when you are not cooking with it.Just kidding all.You will never be sorry if you acquire this cast-iron marvel!!!
