Review of Sitram Profiserie 4.9-Quart Commercial Stainless Steel Saute Pan

This stainless steel cookware has a thick aluminum disk bonded to the bottom surface.The thick disk provides good, uniform heating, and this piece is large enough that, on a small home burner, scorching at the bottom circumference (where the disk ends) is not a problem.Obviously, some proteins will stick to bare stainless, but that's great for making pan sauces, and I've had no trouble cleaning it by boiling some water in the dirty pan.

The handle is excellent.It is thick, round, and comfortable.On the stovetop, the handle stays cool.After the pan has been in the oven, the handle is of course hot (a fact I frequently forget), but it actually cools off quite quickly.The handle is welded, so there are no rivets to make cleaning difficult.This is a large, heavy pan, though, and I would have appreciated a helper handle on the opposite side.

The construction of the pan is definately commercial/industrial.It feels solid and durable.The edges of the aluminum disk have little or no bevel; that is, they edges of the disk meet the bottom of the pan at about a 90 degree angle.This gives the pan something of an unfinished look, and could lead to the edge of the disk catching on the burner grate as you put it on the burner or move it around.Also, the bottom surface of the aluminum disk is not polished--you can see the machining pattern.This makes it a little hard to move smoothly over the burner grate when sautéing.

I am quite happy with the pan, and will continue to buy other Sitram cookware.

Review of Sitram Catering 9.5-Inch Commercial Stainless Steel Lid

Simple, but very effective. Small steam vent prevents lid from jumping/rattling while simmering. Just add a few "real corks" under handle or you'll always need to use a towel/oven mitt as the handle will be hot. Both the lid and the cork have had no problems being run through the dishwasher.

Review of Sitram Catering 4.9-Quart Commercial Stainless Steel Saute Pan

This is a large (11" diameter) saute pan that will brown and evenly cook almost anything you can get in it. It is a very heavy (a desirable attribute) pan. So, if you plan to toss your food while sauteing, you'll need both hands. Almost all of the exposed parts are made of high quality stainless steel, so it's non-reactive (ok for acidic foodstuff) and can be cleaned effortlessly with a Scotch-Brite pad and Bar Keeper's Friend detergent.

The copper disc (~2.5 mm thick) in the bottom of the pan, will give you the responsiveness that you expect from a copper pan without burning a hole in your pocket. If you are sauteing at a continuously high heat, then a similar pan in the Sitram Profiserie line which uses a thick aluminum disk (instead of copper) might be a better buy because it is cheaper, a bit lighter (easier to toss) and may hold heat better when dumping a lot of cold food in it (especially if your burner does not put out a lot of BTU).

If you cook on a smooth ceramic cooktop, just like me, you might want the heavier weight of the Sitram Catering line because the added weight prevents the pan from sliding all over the place.

IMHO, the responsiveness of the copper pan will get you saut?ing sooner than most aluminum pans. Copper is a better conductor than aluminum so it will transfer heat faster. Also, you'll need about 2 times the thickness in aluminum (compared to copper) to make it cook evenly. Since you will be heating a thicker mass with a slower conductor, you will wait a little longer to get comparable aluminum pans to the high heat required for sauteing. Since I am rather impatient, I'll pay extra for copper.

In the same token, the responsiveness of a copper pan will make it cool faster when removed from the heat source. I find this characteristic desirable when I am deglazing or making a sauce after sauteing or frying.

You might read some experts suggest that a fully cladpan (the conductor goes up from the bottom to the sides of pan) is what you should get. They claim that a copper disked pan can have some hot spots and burn food on the side of the pan. Before you run out and spend at least 3 times what you would if you bought this Sitram saute pan, consider the reason behind the suggestion. A fully clad pan with the conductor going up all the way in the sides of the pan will prevent the food from burning in the sides of the pan if a heat source is directly heating the sides of the pan. There are two main reasons not to worry about this in a saut? pan. First, when sauteing you will be tossing and moving bits and pieces of food around. Hence, there will be little time to burn food stuck on the sides of the pan. Second, you will only have this problem if heat is directly applied to the sides of the pan. This pan is 11 inches wide. You'll need a big gas burner going at full blast to get flames scorching the side of this pan. In my case (or for anyone using an electric stove), burning on the sides of a pan is not a problem since there are no flames to worry about.

Finally, I hate having food stuck on those large rivets (that connect the handles) on most pans. Sitram welds their handles so they are much easier to clean. And if you think that their welded handles won't outlast your daily use of this pan, think again. This thing is built like a tank.

And, one more thing about the handle. The Catering line has a "half-moon" handle. It is meant to be held with a towel (like they do in commercial environments). If you do not use a towel, you might feel the handle a bit weird and uncomfortable. I own a number of Sitram Profiserie pans and they have the more popular round handles. After some time (and a few burns holding handles of pans that came out of the oven), I have found the half-moon style handles of the Catering line very comfortable and easier to grip especially if your holding a fully loaded pan.
So, here's the bottom line - if you like the heat responsiveness of a copper pan, and you don't want to pay 300 bucks for a fully clad copper pan, then buy this. At this price point, you would have to try hard to find something comparable.

I've always wanted some Sitram cookware, but it wasn't until amazon.com offered pieces at deep discounts that I took the plunge and bought some saute pans.Rarely does something so totally exceed my expectations, but Sitram does!The deep sides of the pan keep all the activity of sauteeing in the pan and the perfectly even conduction of heat means my husband's sublime risotto got even better!Hoping amazon offers more of this wonderful cookware soon!

Review of Sitram Catering 11.6-Quart Commercial Stainless Steel Stockpot

What I like most about this pot is that it has a copperbottom, sandwiched between two other layers of metal.I think that copper is the BEST metal for even heat distribution.Also, I like that it's a big pot that doesn't have a huge base that would overwelm the stovetop.(The diameter and height are each 9 inches.)

Review of Sitram Profiserie 16.5 Liter Commercial Stainless Steel Stockpot

Most of my cookware is from the All-Clad stainless steel line, as I require pots that are made of magnetic steel in order to work with my induction cooktop. I also like the workmanship of the All-Clad pots. I bought this Sitram stockpot after returning a similar pot by All-clad, having found, contrary to stipulation, that it was not induction capable.

The Sitram pots are sturdy, durable, and perform as represented. They are not as perfectly finished as the pricey All-Clads, but this need not concern you unless you are a well-heeled perfectionist. While the Sitram pots have a thick steel-aluminum-steel sandwich in their base, the aluminum does not extend up the sides. The All-Clads claim to have an aluminum core throughout the pot, but in my experience this is not a vital distinction.

I made my first batch of stock a few days ago using my new Sitram stockpot. I began by browning the chicken parts and onions in the stockpot on my induction cooktop, and can report that the Sitram pot performed admirably, distributing heat evenly throughout its base, and permitting an even and well-controlled browning of the food. Subsequent simmering of the stock also went very well.

Given its attractive price and solid capabilities, I can endorse this Sitram cookware without reserve.

Review of Sitram Profiserie 11.6-Quart Commercial Stainless Steel Half Stockpot

i have one requirement for a pot: it needs to fit my Aga stove. In other words, it should have a perfectly flat bottom and not be too tall to fit in the ovens.Since having the Aga installed several years ago, I had to replace the pots that didn't fit or work properly on the big flat plates that serve as burners..All Sitram pots have athick flat bottom which works perfectly on my stove. Since most of them are made for commercial use, they are extremely sturdy and come in many useful sizes.When I realized that one of my stockpots was too tall for my ovens, i got this pot, and it's perfect, since it's wide and low. This is a great pot for large batches of stew, soup, or stock. It cleans up nicely by hand or in the dishwasher, and a little stainless steel cleaner takes away any stains that do develop.My only (small) complaint is that the lids have to be purchased separately.As you may have guessed, I own several Sitram pots and pans and like them all.They're not expensive, either.

Review of Sitram Catering 22.2-Quart Commercial Stainless Steel Stockpot

I LOVE home made stock.However, I don't have time to make it in small batches.With this pot I can make enough to last two months... and I use a LOT of stock.I like this pot so much, I bought another!That way I can make all my chicken and veal stock in one day.

This is a LARGE pot.I would not recommend this if you don't have a gas range.If you do, AND you make stock, you NEED one of these.This is a very sturdy, heavy duty pot.

NOTE: I also like the lid.It has a small hole to let steam escape while your stock simmers.However, I wish they'd include it with the purchase of the pot.(Who needs a pot without a lid?)

Review of Sitram Catering 11-Inch Commercial Stainless Steel Fry Pan

I was surprised at the weight of this pan; I have been a devotee of "Calaphon" for over 20 years.I am starting to convert to stainless little by little.I have some Cuisinart that is also very good, but I like this better.

The handles are angled up which keeps them out of the way and lets them clear other pans on the stove if you have a major cooking project going.The handle also has a gap where it is welded to the pan which lets fluids drain down rather than collect in a pocket.It can make your stove a little messier, but it is easier to keep the pan clean.

The interior is silky smooth and requires just a small amount of oil to keep food from sticking.The recommend that you use non-metalic utensils to keep from scratching it.The heavy layer of copper bonded between two layers of stainless on the bottom works great to distribute heat accross the pan.The side are a single layer of heavy stainless, so they do not get hot and cause food to burn on.

This pan is very well made and should last for a lifetime.

Review of Sitram Catering 5.4-Quart Commercial Stainless Steel Braisier/Stewpot

I was very apprehensive about buying this pot because the description says it's a 5.4qt pot, and 5.2" high. This conflicts w/ my old-old Sitram info that says it's supposed to be 7.4qts and 6.3" high. However, there was an interim distributor that did describe it as a 5.4qt pot. As it turns out, the pot really is 7.4qts, and about 6+" high (interior) - just what I wanted.

It's now been 30+ years since I became serious about cooking. Over the years, I've owned sets of Calphalon (anodized), All-Clad and Cuisinart, but they all had/have faults that I found unacceptable. Eventually, I settled on the Sitram Catering line for my cookware arsenal. For me, the Sitram Catering line is the best with the least faults at an affordable price.

I do still use black steel frypans (Bourget) because I can get them really hot without fear of warping; and LeCreuset pots for those stews and slow braises. And my faithful woks, of course.
