I can't say enough great things about the craftsmanship of the Henckels Twin Professional series.After purchasing their Chef's Knife, we're sold on the entire line.Only one word of caution, there are a number of different Henckels lines. The Professional series provides the best balance and handling ease; something that the other lines don't. Be sure to purchase a wet stone for sharpening! Anything else will wear down these fine cutting instruments too quickly. Chop! Chop!
