Review of Bunmei 10-1/2-Inch Tako Sashimi Knife

This knife is the ultimate in slicing raw fish. The square tip is in the "Osaka style", which makes it a little more unique than other traditional sushi knives. The all stainless construction means easier maintenance, since most sushi knives are carbon steel and rust and stain easily. Balance is never, ever a consideration with sushi knives. They are not made for chopping. The long blade is designed for extended blade strokes while slicing through fish or vegetables. This knife gets lots of use at our house, even in slicing bananas for morning breakfast!

Review of Global Two-Sided Water Sharpening Stone, Rough/Medium

This is a great buy if you need sharp knives.I am a line cook and use the stone about once a week.It doesn't take long to get a great edge... whichever technique you use.The pink side (very coarse) does most of the work for you.Then run the knife over the blue side a few times and voila...a super sharp knife.I also like that the stone came with a plastic cradle to rest in so it doesn't slide all over the place.This stone is worth its weight in gold...and it's worth it because as long as it doesn't get lost you'll never have to buy another one.

I'll be honest; I ordered this knife because I liked the looks of it, so fortunately it cuts pretty well. If I get the handle wet, though, I find the knife a bit hard to hold, with a tendency to twist in my hand. I get around it by wrapping a bit of paper towel around the handle.

Review of Global 8-Inch Heavyweight Vegetable Knife

The first time I used this knife, I knew from that second that this would beone of the most treasured items in my kitchen.I LOVE it.I have Henckels & Wusthof knives, but this knife is by far the best.When I prepare a meal, my favorite part is when I get to use my knife.I cannot possibly express to you how truly wonderful this knife really is.Buy it!Buy it!BUY IT!You won't be sorry (except when you aren't paying attention and cut yourself)!I only wish I had the money to purchase a whole set; I will one day...

Update: I also purchased the "Global 10-Inch Diamond Sharpening Steel" and WOW - it's amazing.If your knife is a little on the dull side, run it over the sharpener a few times, and BAM!It's as sharp as it was when you bought it.Simply amazing.

Review of Global 10-Inch Chef's Knife

I own both wusthof-trident and henckels sets but this is my favorite knife.I wasn't sure if a 10 inch was too large and unwieldy but this knife is beautifully balanced and so light weight that I have had no problem.Another great featuere isthe fact that it is one solid piece so there is no yucky gunk that gets trapped in the haft or hinge area.

It sharpens very easily on a hardware store whetstone and for the finicky there are cheap knife guides available from the manufacturer to guarantee that you have the correct angle when grinding and sharpening.

If you want light weight with a very nice edge in combination with easy maintenace I would choose Global over either Wusthof or Henckels.For the style conscious -- it is very cool looking indeed.

Review of Global 5-Inch Cook's Knife

To be honest, I didn't love it at first, it didn't feel right in my hand.But I've been using it for a while now, and to be honest, the more I use it the more I like it.Its very sharp, keeps its edge and seems relatively easy to sharpen.BTW I'm a professional chef and use my tools hard.I think I like this knife better than my Grand Prix's and am thinking of buying a full size chefs knife next to see how I like it.

This knife is one of my favorites now, even replacing my Whustoff off set serated as one that always finds its way into my hand.

Review of Global 8-3/4-Inch Bread Knife

My Global has been slicing bread for three years now and guests still comment that it's "a really sharp knife".A low-carb disbeliever, and living near Seattle bakeries that are serious about their product, I eat lots of bread.Much mileage on the knife and it still melts through hard-crust Toscano Loaves like they were Wonderbread.Two more of these knives have been purchased for wedding gifts.Followup shows that the newlywed recipients didn't know that there were special knives just for cutting bread and are using this wonderful knife for cutting up everything. And love it.

Review of Global 10-Inch Left-Handed Yanagi/Sashimi Knife

I love this knife!!! I have small hands and the size doesn't bother me at all. Global knives are the best. The handles are the most comfortable I've ever used. I have other knives, but I have a tendency to go to my Globals more. This carves through frozen chicken like butter. Unbelievable.....love it!!!!!

This is really a great knife and was an excellent addition to my growing collection of globals.i opted for the heavyweight instead of the flexible because i thought the rigid blade would allow me to steer it better.I have a friend with the flexible so i have tried both and i prefer the heavier, non-flexible blade.

We had purchased some of the other Global knives and we very impressed with the quality & construction, but kept putting off buying the steak knives wondering if it was worth the price.You know, they are steak knives.How good can they be? After getting the first four, I have to say these are one of the best knives in the Global line! (The 3-1/2" paring is amazing as well)

Review of Global 5-1/2-Inch 14 cm Vegetable Knife

I have 10 Global knives covering a wide range.I bought each individually over the course of several years and put quite a bit of thought into each purchase to ensure that it met a need and that the Global knife was the best designed knife of its kind (usually the case which is why I own more Global knives than other kinds).Despite my broad range of choice I find myself pulling the 5.5" vegetable knife off the wall more than all others.I'm a sharpening fanatic and this knife is unbelievable - I can effortlessly dry shave hair off my arm (it will grow back).I believe it's my most frequent choice because the size is just right for almost any chopping job - vegtables, fruit, meats, breads (you don't need a bread knife if your regular knife is insanely sharp), sandwiches and even some cheeses.The fact that the knife is blunt nosed initially did not attract me to it but the broad side of the knife is usefull for picking up food or spreading and makes the knive a bit less intimidating.The knife is ultra light in weight and the triangular handle, a unique design to Global knives, fits so well in your hand that I wonder why Global is the only company to make such a handle.I personally have not experienced the slipping problem that another reviewer has.The handle has a notch just before the blade so you finger is not even close to the cutting edge - it is a very safe design.I have other knives that are "nicer" in some respects but I don't use them as much and if I had to give away all my knives but one this would be the one I would keep.

Review of Global 7-Inch Deba Knife

Professional cook here. I don't use this knife as an all purpose knife. It wasn't intended to be one. I've tried to, but it doesn't work very well as one. It being single bevel, it tends to make the wrist turn while cutting hard objects like carrots, which is why it shouldn't be used in place of a chef's knife. Debas are meant to be used for breaking down whole chickens (not cutting the bones though) and butchering fish (can cut fish bones).

While the Global deba (and all Global knives in general) is very sharp out of the box, it is because of the concave edge they put on it, not the traditional V edge. It stays sharp longer, but without special equipment, one cannot sharpen Globals to the same factory edge with just sharpening stones.

I don't see how Global can really classify this knife as a deba though. It's too thin to be a real deba and rather light. Debas are usually twice as thick and have a tougher edge, rather than the delicate edge on the Global deba. I had to sharpen this knife to a more obtuse angle to use it for its intended purpose because the edge kept on rolling or chipping. Plus, it's rather expensive. There are much better debas out there made with better steels for the same price or cheaper. I applaud Global for being unique in their designs, but function over form is extremely important with knives in the professional kitchen. A deba is meant to be used and abused with no babysitting.

Review of Global 5-1/2-Inch 14 cm Cheese Knife

The idea of a cheese knife with "holes" in the blade is to reduce the friction as one slices cheese, thus ensuring consistant slices, without the cheese crumbling or falling apart. This Global knife delivers admirabley to the task. Indeed, the design best fits hard cheeses, and Global have (imho) the best knife for this, period. Our old "stamped" knife bends and is awkward (dangerous) on hard cheeses.

For soft cheeses, this may not be the best knife, probably a knife such as one would use for pate would be best. But, it is the penultimate for soft cheeses, and the best all round cheese knife my wife and I have ever experienced. We never regret the purchase.

Review of Global Ceramic Whetstone, Medium Grit

My only wish would be to have it be a little longer.The ceramic material is harder than traditional stones, which gives it a different feel, but is just as effective, and won't warp the way whetstones do after multiple uses. Great tool for keeping razor sharp knives.

Review of Global 6-Inch 15 cm Serrated Utility, Scallop Knife

I bought this knife along with a few other Global knives and ended up returning it.This is not to say that this is a bad knife but I found that it was unnecessary alongside the rest of the Global knives I purchased.The non-serrated knifes are so sharp that there were practicaly no instances where I needed to use this knife.I did end-up keeping the 8" serrated bread knife but as long as you have that one, you don't really need another serrated knives.

I like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives.A special tool and technique is required and the whole process is very time consuming.In addition, make sure that you use a ceramic sharpener on all global knives.Its supposed to have a different grit that is better for them.Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

Review of Global 2-1/2-Inch Bird's Beak Peeling Knife

Among my assorted bird's beak paring knives, this one has a special place. There's no hiding place for any transfer of salmonella bacteria from poultry to produce, for this knife is made of a single piece of steel, and the solid handle has good weight. (Not all knives in this line have a solid handle.) Furthermore, it stands up to use and abuse, unlike any other knife I've ever had.

I bought mine in a specialty knife store (which has since gone out of business) close to ten years ago. After a nameless family member helped out in the kitchen, it seemed to have disappeared, and I mourned for this little knife. Turns out said family member had accidentally dumped it in the composter, along with a small mountain of vegetable waste. I boiled it and it rejoined the household.

Comfortable to hold, it does a variety of paring tasks well in the kitchen. Slipperiness mentioned in reviews of other knives in this line has not been a problem. Weight and balance are excellent. I like the completeness with which it can be cleaned.

If you have a kitchen or flower garden, you'll find good uses for it outdoors as well. I grow edible ginger, as well as the kind with flowers. For cutting the rhizome from the plant, this can't be beat. I also use it when it's time to thin the heliconias and strip old leaves off lilies.

In perusing reviews about other knives in this line, there appears to be concern about sharpening the Japanese-made steel. I use a Chantry knife sharpener and find it brings this knife back to an acceptable edge.

BOTTOM LINE: If you like the bird's beak style of paring knife, you are likely to find a use for this one. Amazon's price is excellent. I paid about twice the amount and would recommend it even at that price. If you've never tried a bird's beak paring knife, this one is reasonably priced and especially versatile for the reasons mentioned.
